Hello everyone, this is Arata Tomori. Today I'd like to talk about what I eat to avoid gaining weight. You might wonder, "Shouldn't we avoid eating certain foods to stay thin?" As I'm now in my mid-40s at age 46, I've found that rather than restricting myself, it's better to eat foods that work positively within my body to prevent weight gain and make my body more prone to losing weight. As I'm at an age where I can't endure much self-denial anymore, I'd like to introduce foods I'm eating that support this approach. So if you want to lose weight without extreme dieting or just want to maintain good health, please watch until the end. To put it broadly, the main thing I eat to avoid gaining weight is fermentable dietary fiber. Fermentable dietary fiber has become quite trendy lately, especially with commercials featuring it. The reason it's become such a trend now is that we used to categorize dietary fiber as soluble or insoluble based on whether it dissolved in water. Now, however, we're categorizing it based on whether it ferments easily or not. So what is fermentation? Dietary fiber itself was always said not to be nutritious to us because it isn't absorbed in the stomach or small intestine—it reaches the colon without being digested, so it wasn't considered nutritious. However, recently we've learned that when it reaches the colon, it becomes food for gut bacteria and produces fermented substances, which has become recognized as important. So why do I say that eating fermentable dietary fiber makes me lose weight more easily and gain weight less easily? When fermentable dietary fiber feeds gut bacteria, beneficial bacteria increase and your digestive health improves—I'm sure you already know this. But there's another mechanism: when you eat fermentable dietary fiber, your gut bacteria produce something called short-chain fatty acids. Short-chain fatty acids have various positive effects on our bodies and are known to be effective for weight loss. While short-chain fatty acids are often highlighted for their effects on immune function and allergies, they actually suppress the absorption of excess sugars and fats. So even if you eat the same amount, excess substances are excreted more easily, making your body more prone to weight loss and less likely to absorb unnecessary things. Additionally, within short-chain fatty acids, there's something called butyrate. When this increases, it signals your brain that you don't need to eat anymore. Rather than struggling with willpower to avoid eating, it's much easier when your body naturally tells you it's full. That's what makes this approach work so well. So if you want to lose weight or have a body less prone to gaining weight, you should definitely eat plenty of this fermentable dietary fiber. However, fermentable dietary fiber comes in many types. Your colon is long, and many different bacteria live there. Interestingly, the bacteria living there have different preferences when it comes to fermentable dietary fiber. For example, some are called luminocoal, but rather than eating just one type, it's recommended to eat quite a variety. So I make it a point to eat five basic foods every day in some form. First is kiwi. I think kiwi is a truly wonderful fruit. Not only do you not need to peel it—you can eat it as is—but it contains vitamins C and E and other vitamins that are good for your skin. Among fermentable dietary fibers, it contains pectin, which is said not to raise blood sugar levels quickly. Since it naturally contains fermentable dietary fiber, it helps create a body less prone to weight gain. If you want to eat fruit in the morning, I'd really recommend kiwi. Next is barley. Barley includes things like pearl barley mixed into rice and multigrain varieties, as well as barley found in cereals like All-Bran. Barley is rich in arabinoxylan, a fermentable dietary fiber. Arabinoxylan itself is also fermentable dietary fiber that doesn't raise blood sugar levels quickly, and it properly reaches your colon and produces short-chain fatty acids. It suppresses the desire to eat more, so if you eat white rice in the morning, try adding pearl barley instead. Or if you want something more convenient, eat barley-based cereals like All-Bran. Third, something I've recently gotten into, is fermented red bean paste. Red beans themselves contain resistant oligosaccharides, which are fermentable dietary fibers. But red beans are usually sweetened, right? So while you're eating them for weight loss, they contain sugar. I was puzzled, so I looked online and found that if you ferment red beans by adding sake lees, the sake lees fermentation creates natural sweetness without needing to add sugar. I thought this was great! So I cook red beans normally in a rice cooker twice. Then I add sake lees, keep it on the warming setting with the lid open for about eight hours, and fermented red bean paste is ready. Even without added sugar, it tastes incredibly delicious. When you want something sweet, eating this as a snack gives you that sweet taste while keeping blood sugar levels stable. And because you're eating resistant oligosaccharides, your stomach feels happy, and you get great satiety from just a small amount. I sometimes add something called Lulu Milk, which contains various fermentable dietary fibers. Since it contains kinako and other ingredients that add richness and umami, I heard it can even go in miso soup. I thought maybe it would add depth to fermented red bean paste too, and when I tried it, it added wonderful richness and tasted delicious. I think your gut environment will be happy with it. When you want something sweet, try making this fermented red bean paste. Here's the recipe: Put 200g of red beans with 400cc of water and cook them twice in a rice cooker just like cooking rice. The red beans become very soft. Then add koji mold. After adding the koji, add 200cc of water and mash it. Mash the koji somewhat while mixing like this. Keep this on the warming setting with the rice cooker lid open for 8 hours or more. Without covering it would make it dry, so put a damp towel over it. Leave it in this state for 8 hours. Keep the lid open on the warming setting, and in the morning it looks like this. It's done! Put it in a glass container, let it cool, and store it in the refrigerator. I eat it for breakfast or as a snack. It's packed with fermentable dietary fiber. Next is natto. Natto also contains resistant oligosaccharides like red beans. Just eating breakfast rice with pearl barley and natto gives you fermentable dietary fiber, which is good for dieting. By getting fermentable dietary fiber, your body's balance improves, making it very positive for your gut environment. Finally, fifth is wakame seaweed. Seaweed contains alginic acid, a fermentable dietary fiber. For example, rice and natto with wakame miso soup—by eating various types of fermentable dietary fiber, short-chain fatty acids are produced in your body, preventing excess energy from entering your body, boosting metabolism, and reducing hunger. This way, your body naturally becomes one that can lose weight. If you hate restricting what you eat but want to develop a leaner body type, paying attention to the five foods I mentioned today and eating various types of fermentable dietary fiber will naturally make your body more prone to weight loss, so please try it.
