普段のその食べ方は危険!皮膚科医が体に悪影響のある食べ方を教えます

みなさんこんにちは、友利新です。今日はですね、実はその食べ方危険ですということで 体に悪影響のある食べ方というものを今日はご紹介したいと思います 食べ物って私たちの中ですごく大切なんですけど、調理法だったりとか 扱い方を間違えると体に害になることもありますので、気になる方はぜひ最後までご覧ください まず一つ目は冷凍された魚を常温で解凍することです 冷凍した魚の種類によってはですね、解凍の仕方を間違えてしまうとアレルギー症状を起こしてしまうことがあるんですね じゃあどういうお魚かっていうと、マグロとかサンマとかブリとか赤身の魚になります この魚にはですね、ヒスチジンと呼ばれる成分が多く含まれています ヒスチジンというものはですね、冷凍して常温で解凍していくとですね、ヒスタミンという成分に変わりやすくなってしまいます ヒスタミン、皆さんどこかで聞いたことありませんか? 体の中でですね、アレルギーのような症状を起こして痒みだったりを引き起こす成分なんですね 特に何かアレルギーがあるわけじゃないんですけれども 自然解凍させてしまった赤身のお魚、ヒスチジンが多いものを食べてしまうと 口の中とか肌に痒みを起こしてしまうということになってしまいます 残念ながらですね、ヒスタミンというのは熱に強いんですね なので自然解凍して、例えば焼いたりとか煮たりしたとしてもですね ヒスタミンに一回変わってしまったら、それが分解されたり壊れたりすることがないので なるべく冷凍したお魚っていうのは早めに食べたければ電子レンジの解凍モードにするとか 半日とか1日かけて冷蔵庫で解凍するようにしてみてください なので朝ね食べたいなと思ったら夜のうちに冷蔵庫に入れておくと ちょっとね工夫をしてみてください 続いて2つ目、一度溶けたアイスクリームを再冷凍して食べることです これはなんとなく封を開けてなければ安心なイメージありませんか? もちろん口をつけたアイスはもう1回冷凍するってことはないと思うんですけれども 例えばついつい冷凍庫に入れるのを忘れて、どうせ開けてないから大丈夫だろうと思ってもう1回冷蔵庫に入れて食べちゃったなんて経験ありませんか? 実はそれかなり危険なことになります 未開封のものでもちょっとぐらいは菌っていうものがいたりするんですね 特にアイスクリームとか乳製品だったりあとたっぷりのお砂糖が入っていますよね そういうものは冷凍しておけばですね菌の増殖っていうのは基本的にはないんですよ ただ一度常温に戻ってしまった状態っていうのはですね 菌がですね急に増殖して増えてしまうという可能性があるんですね 増えてしまったものはですね冷凍してもですねまだ増えた状態にいますので それを食べると食中毒だったりとか下痢だったりそういった胃腸の症状とかを起こす可能性があります なので一度解凍してしまったものを再冷凍するっていうのは危ないことなんですね アイスを見てみるとそうやってね注意書きも必ず書いてありますので 1回ね解凍してしまったものはもうもったいないんですけれども必ず破棄するようにしてください 続いて3つ目は一度口をつけたペットボトルの飲み物を冷蔵庫で冷やして1日持たせることです 最近はねもう暑いのでペットボトルを買って飲みながら過ごす方も多くて 気がついたらちょっとだけ残っていたので冷蔵庫に入れて次の日も飲んじゃうなんてことありませんか これ実は危険なことなんです 口の中っていうのはもちろん菌がたくさんいるんですね なので一度口をつけたペットボトルというのはその口のところにですねやはり菌がいます この菌が1日中常温のところにいると増えてしまう可能性があるんですね 増えてしまったものをいくら冷蔵庫に置いたからといって増殖がなくなるわけではないので 次の日にまた飲んでしまうと菌を飲んでしまうということにもなってしまいます あとは甘めのスポーツドリンクとかカフェオレだったりとか 甘いものはですねやはりその中で菌がどんどん増殖してしまうことになります 口の周りだけじゃなくて飲み残しの中にもですね菌っていうのは入ってしまうんですね どんなに冷蔵庫の中で1日置いておいたとしてもですね 次の日には飲みかけの液体自体に菌が増殖している可能性があります 危ないので必ず飲みかけでもものは捨てて保存はしないようにしましょう 特に免疫力が下がっているご高齢の方っていうのはですね 誤嚥性肺炎みたいなものが起こしてしまったりとか食中毒を起こしてしまったりということもあり得ます なのでね特にご高齢の方はなるべくそういったものは捨てていただきたい ちょっと外れるんですがペットボトルを洗って再利用というのもなるべくやめていただきたいことなんですね もったいないという気持ちもあるかもしれないんですが 暑くて菌の増殖しやすい時期はなるべく気をつけてください 続いて4つ目2日目のカレーに気をつけてください カレーとかシチューとかって2日目が美味しいなんて言われていますよね もちろん煮込んでねそれで味が変化して美味しくなるということもあるんですが 変化するのは菌の量もあります 特に煮込み料理とかにはですねウェルシュ菌というものが増殖しやすいですね ウェルシュ菌っていうのは熱に強いので1回に沸騰させたりとかしてもなかなか死滅しないんですね プラスアルファウェルシュ菌っていうのは常温だったりするところで増えやすくなってきます もう一つ怖いのはウェルシュ菌っていうのは空気が嫌いなんですね 空気がないところでもですね増えていきます 1回沸騰させたりすることで安心するかもしれないんですが ウェルシュ菌は芽胞といって殻みたいなものを作って死滅はしてしまわないですし シチューとかはとろみがついているので空気が入りにくいですよね なのでウェルシュ菌がちょっとでもいたものを置いてしまうと増えてしまう可能性があります この時期は特にですねやっぱりウェルシュ菌の食中毒多いですから カレーはね食べていただきたいんですけども 作った場合はなるべく大鍋でそのまま置いておくとかそのまま冷蔵庫に入れるんじゃなくて 空気が触れるように小分けにするとかその日のうちに食べるということにしてください だいたいウェルシュ菌の食中毒ってのは食べて10時間後ぐらいからになるので 集団の食中毒を起こしやすい菌になりますから気をつけてください カレーとかシチューだけじゃなくてお味噌汁とかでも結構起こるんですよね お味噌汁って朝作ったら夜まで持たせたりするじゃないですか 特に夏休みとか私もね3人子供がいるので朝作って昼も食べさせて夜も食べさせて だからめんどくさいから冷蔵庫に1回1回入れて温めるのは味が変わるかもと思って ついつい常温に置きがちなこともあるんですが なるべく朝作ったものは朝のうちにとか 必ず冷蔵庫に入れて常温では保存しないようにしてください 続いて5つ目 お弁当にヘタのついたミニトマトを入れないでください お弁当を作る場合ミニトマトってすごく彩りが良くて入れちゃいませんか 私もね弁当には必ずと言っていいほどミニトマト入れるんですけれども その時にですね緑もあるからヘタをつけておいた方がいいかなとは思いがちなんですけど 実はこのヘタの部分っていうのは雑菌が付着しやすい場所なんですね いくら洗ってもその雑菌ちょっとついているとですね お弁当ってやっぱり常温で置いておくこと多いですよね そこで雑菌が増えてしまってお弁当の中で増殖してしまうことになるんですね なのでなるべくミニトマトのヘタは取るということ もう一つミニトマトっていうのはそのまま1個入れていると ちょっとね喉に詰まらせちゃうかもと思って半分に切ってしまうこともありますよね でも半分に切るっていうことも実はお弁当に入れてしまうと 食中毒の原因になる可能性があります ミニトマト切ると中から液が出てきますよね 水分がある場所にやはり菌っていうのは増殖してきます なので切って入れておくと食べやすいと思うかもしれないんですが なるべくミニトマトはヘタを取って切るんじゃなくってそのまま入れるようにしてください まとめると冷凍しているお魚っていうのは自然解凍ではなくて なるべく冷蔵庫か電子レンジの解凍モードで解凍してあげてください 一度常温になってしまったアイスっていうのは もう1回固まっても絶対に食べないようにしてください 2日目のカレーそして1日置いておくようなお味噌汁っていうのは 小分けにするか必ず冷蔵庫に入れて保存するようにしましょう そして1日飲んだペットボトルはちょっと余っていてももったいないからといって 冷蔵庫で保存するようなことはしないでその日のうちにもう破棄するようにしてください そして最後にミニトマトはお弁当に入れる際は必ずヘタを取ってください 切らずにそのまま丸ごと入れるようにしてください 暑くなってきたりするといろんな食べ物のリスクっていうのが高まってきます 今年は本当に猛暑が続いていますので皆さんね体力も落ちてくるところに そういったね菌だとか腐敗したものを召し上がってしまうと 体の中でアレルギーみたいなものが出たりとか食中毒を起こすということもありますので 食べ方には注意をしてください ということで今日の内容いかがだったでしょうか 今日の内容良かったよという方はですねグッドボタンを押していただいたり あと今ですね月額90円でメンバーシップを始めています 週水曜日にメンバー限定でYouTubeライブを行っています 水曜日参加できないという方もですねアーカイブメンバー限定で残していますので 入会していただけると嬉しいです ということで今日も最後までご覧いただきありがとうございました また次の動画でお会いしましょう さようなら

Hello everyone, I'm Tomoshiro. Today I'd like to introduce you to some dangerous eating habits that can have negative effects on your body. Food is very important to us, but if we get the cooking method or handling wrong, it can be harmful. If you're interested, please watch until the end. First, defrosting frozen fish at room temperature. Depending on the type of frozen fish, if you defrost it incorrectly, it can cause allergic reactions. These are fish like tuna, mackerel, and yellowtail—red meat fish. These fish contain a lot of a component called histidine. When histidine is frozen and then defrosted at room temperature, it easily converts to a substance called histamine. Have you heard of histamine before? It's a component in our bodies that causes allergy-like symptoms and itching. Even if you don't have any particular allergies, if you eat red fish that has been naturally defrosted and contains a lot of histidine, you may experience itching in your mouth or on your skin. Unfortunately, histamine is heat-resistant. So even if you cook it by frying or boiling after natural thawing, once it's converted to histamine, it doesn't break down or decompose. For frozen fish, if you want to eat it soon, use the defrost mode on a microwave or thaw it in the refrigerator over half a day or a full day. So if you want to eat it in the morning, put it in the refrigerator the night before. Second, refreezing melted ice cream and eating it again. Don't you have the impression that it's safe if you haven't opened it? Of course, you wouldn't refreeze ice cream that you've put your mouth on. But have you ever forgotten to put it in the freezer, thought it would be fine since it hasn't been opened, put it back in the refrigerator and eaten it? Actually, this is quite dangerous. Even unopened items have some bacteria. Especially with ice cream and dairy products that contain lots of sugar, when they're frozen, bacteria don't basically multiply. However, once something returns to room temperature, bacteria can suddenly multiply and increase. Even if you refreeze something that's already had bacteria multiply, the bacteria remain in that multiplied state. Eating it can cause food poisoning, diarrhea, and other gastrointestinal symptoms. So refreezing something that has been defrosted is dangerous. Ice cream packages always have warning labels about this, so if something has been defrosted once, even though it's wasteful, you must throw it away. Third, leaving a drink from a used plastic bottle in the refrigerator for a day. Recently, since it's hot, many people buy plastic bottles and drink from them throughout the day. Haven't you ever found a little bit left over, put it in the refrigerator, and drunk it the next day? This is actually dangerous. Your mouth has lots of bacteria. So once a plastic bottle has been used, bacteria are on the rim. If these bacteria stay at room temperature for a day, they can multiply. Even if you put them in the refrigerator, multiplication doesn't stop. If you drink them the next day, you'll be drinking the bacteria. Also, sweet drinks like sports drinks or café au lait—sugar helps bacteria multiply. Bacteria get into not just around the mouth but also into the remaining liquid. No matter how long you leave it in the refrigerator for a day, the next day there could be bacteria multiplying in the liquid itself. It's dangerous, so even if there's a little left in a used bottle, don't save it in the refrigerator—throw it away the same day. This is especially important for elderly people with weakened immune systems, as they can develop aspiration pneumonia or food poisoning. So especially for elderly people, please throw these things away. Although it's a side note, you should also avoid washing and reusing plastic bottles. Even though you might feel it's wasteful, be careful during hot weather when bacteria multiply easily. Fourth, be careful with curry on the second day. They say that curry and stew taste better on the second day, right? Of course, as they simmer, the taste changes and becomes delicious. But what also changes is the amount of bacteria. Especially in stewed dishes, Clostridium perfringens easily multiplies. Clostridium perfringens is heat-resistant, so even if you bring it to a boil, it doesn't easily die. Additionally, Clostridium perfringens easily multiplies at room temperature. Another scary thing about Clostridium perfringens is that it dislikes air. It can multiply even in places without air. You might feel reassured by bringing it to a boil, but Clostridium perfringens forms spores like shells and doesn't die. Stew has a thick consistency, so air doesn't easily get in. So if even a little Clostridium perfringens is present when you leave it, it can multiply. This season especially has a lot of Clostridium perfringens food poisoning. I want you to eat curry, but when you make it, instead of leaving it in a large pot as is or putting it directly in the refrigerator, divide it into small portions so air touches it, or eat it all the same day. Clostridium perfringens food poisoning typically starts about 10 hours after eating, so it's a bacterium that easily causes group food poisoning—be careful. It happens not just with curry and stew but also with miso soup. You make miso soup in the morning and have it through the evening, right? Especially during summer break, I have three children, so I make it in the morning, feed it to them at lunch, and feed it to them at dinner. It's a hassle, so I'm tempted to keep it at room temperature rather than put it in the refrigerator each time and reheat it because the taste might change. But try to eat what you make in the morning during the morning, or always put it in the refrigerator and don't store it at room temperature. Fifth, don't put cherry tomatoes with stems attached in your bento box. When making a bento, don't you often put cherry tomatoes because they have great color? I pretty much always put cherry tomatoes in my bento. But since there's green on them, I tend to think it's better to keep the stem on. Actually, the stem is a place where bacteria easily attach. Even if you wash them, if bacteria are still attached, bentos are often left at room temperature. So bacteria multiply and grow inside the bento. So try to remove the stems from cherry tomatoes. Another thing: when you put a whole cherry tomato in, you might worry about choking a bit and cut it in half. But actually, cutting it in half and putting it in a bento can cause food poisoning. When you cut cherry tomatoes, liquid comes out. Bacteria multiply where there's moisture. So even though cutting them might make them easier to eat, try to remove the stems and keep cherry tomatoes whole instead. In summary: For frozen fish, don't thaw it naturally—thaw it in the refrigerator or using a microwave's defrost mode. For ice cream that's returned to room temperature, absolutely don't eat it even after it refreezes. For curry on the second day and miso soup left for a day, divide it into portions or always store it in the refrigerator. For plastic bottles you've drunk from, even if there's a little left, don't store it in the refrigerator just because it's wasteful—throw it away the same day. And finally, when putting cherry tomatoes in your bento, always remove the stem and put them in whole without cutting. As it gets hotter, the risks from various foods increase.
