Hello everyone, this is Arata. Today, let's start another episode of Arata's Kitchen. This time, for those of you who may have gained weight over the New Year holidays, or who are determined to start a diet this year, I'll be making a low-carb curry fried rice. Fried rice is basically a lump of carbs, right? Of course it is—you're frying rice, after all. Delicious food is often synonymous with carbs and fat, but today I'll use a special ingredient to cut the carbs in half. That ingredient is "cabbage rice." Did you know about this? It's cabbage finely chopped to be used as a substitute for rice. Apparently, it's made by reusing cabbage cores that are normally leftover from making salads or cut vegetables, so it's great in terms of today's trends toward eco-friendliness and recycling. Plus, by using this instead of rice, you cut down on carbs while getting plenty of dietary fiber—truly a win-win. Today, I'll be using this rice-like vegetable, cabbage rice, to make a low-carb curry fried rice. [Ingredients] Since it's fried rice, feel free to use whatever you have at home. Today I'm using ground pork, onion, and eggs. Actually, when I first tried making it with just these ingredients, I felt it needed a stronger flavor, so I decided to make it curry-flavored. Curry powder works fine, but I'll be using my own original product, "Addictive Specialty Spice & Oil Curry." It comes in flake form rather than as a curry roux, making it perfect for dishes like this curry fried rice. Cabbage rice alone would be fine, but to pursue even better flavor, I'll also add a bit of thawed frozen rice. [Instructions] First, finely chop the onion—about a quarter of an onion is enough. Any vegetable you have at home would work well here. Onions bring out a nice sweetness, and since cabbage rice also has a natural sweetness from the cabbage, they pair well together. I'll chop it finely so the texture matches well with the cabbage rice. The key to delicious fried rice is avoiding a soggy texture. I like to scramble the eggs first and add other ingredients later. Add a little salt to the eggs and scramble them, then set them aside in a separate container. Next, sauté the onions. Onions contain a compound called allicin, which causes tears and is also said to help prevent colds—perfect for winter. Once the onions are softened, add the ground pork and cook until the color changes. Many people use bacon or sausage at this stage, but processed meats aren't the best for your health, so I try to use meat in its more natural form. Of course, using bacon or sausage is fine too if you want a quicker meal. Add consommé and salt here to season the mixture. Now it's time for the cabbage rice! You might be curious what it looks like inside—it resembles cold cooked rice. Add it straight from frozen. Turn the heat to high and mix everything together thoroughly. It tends to release quite a bit of water, so make sure to fry it well. Once everything is heated through, add the thawed rice (about one serving's worth). Mixing the rice and cabbage together makes the volume increase significantly—so much that you can barely tell which is rice and which is cabbage! This makes enough for about 3–4 servings, especially if kids are eating too. Add a bit more curry flakes to adjust the seasoning to your liking. Once everything is well mixed, return the scrambled eggs to the pan. And it's done! Honestly, it's hard to tell the rice apart from the cabbage. Adding some green peas for color might have made it look even more like classic fried rice. When plated, it looks just like a regular curry fried rice at first glance. It's hard to believe that half of it is actually cabbage! [Taste Test] Let's dig in... Wow, this is genuinely delicious! It might sound strange to praise my own cooking, but I really recommend trying this. The crisp texture and sweetness of the cabbage blend perfectly with the sweetness of the rice, and it doesn't taste like a typical low-carb substitute at all. Cabbage naturally pairs well with curry and spices, so the flavor is rich and satisfying. The ground pork, being finely minced, adds a nice textural accent. And of course, these curry flakes are what really make it shine. Today, I made curry fried rice using cabbage rice—a rice-like vegetable. I think it's wonderful that parts of cabbage that would otherwise be thrown away can be used just like rice. Modern people often lack vegetables and dietary fiber, which can worsen gut health and even affect skin condition. In that sense, this is a great ingredient for overall health. I actually found this cabbage rice on Amazon Fresh. I originally thought, "It's just cabbage, after all," but it turned out to be far more delicious than expected, so I highly recommend giving it a try. So, how was today's episode? Midway through, you might have thought, "Is this really going to turn out okay?" But in the end, we got a truly delicious dish.
