皆さんこんにちは、内科・皮膚科医の友利新ともこです。今回も新田'sキッチンを始めていきたいと思います。だんだん新田'sキッチンが簡単になっていっているという噂なんですが、今日はなんと火を使わないです。コンロも使わないです。切って混ぜるだけの簡単美肌朝食になります。そうなんですよ、暑くなってくると火を使うのが面倒くさいじゃないですか。私は朝起きた時に本当にパパッと作りたいので、今日は10分あればできるような、簡単でかつ火も使わない美肌朝ごはんを皆さんにご紹介したいと思いますので、最後までご覧ください。 では早速材料をご紹介していこうと思います。今日はお味噌汁とおにぎりになります。おにぎりの具なんですが、大葉、みょうが、白ごま、桜えびになります。もう一つがおぼろ昆布ですね。あとこれがポイントなんですが、コンビニに売っている銀鮭の塩焼きです。これは別にコンビニじゃなくてもいいですし、前の日の残りのものでもいいですし、スーパーのお惣菜コーナーに必ずといっていいほど鮭の塩焼きが売っていますよね。鮭は焼くのが面倒くさいですが、市販品も多いのでそれを買っておいていただければ、すぐ簡単にできます。 鮭は言わずと知れた美肌食材で、肌のツヤをアップさせたりバリア機能をアップさせるDHA・EPAが入っています。また、アスタキサンチンも含まれており、紫外線が当たった時にシミを作るのを防いだり、ビタミンCの50〜60倍ともいわれる強い抗酸化作用があります。鮭は皆さんご存知だと思いますが、実は桜えびにもアスタキサンチンが入っているんですよ。プラスカルシウムもしっかり入っています。大葉は味のアクセントになるだけでなくビタミン補給にもなります。ごまにはセサミンという抗酸化作用の高い成分とビタミンEがしっかり入っています。ビタミンEは血流を促進するので、肌色を良くする効果があります。 では早速作っていきましょう。切るだけです。大葉は茎を取り除いて細かく切っていきます。大葉とみょうががあればなんとなく美味しくなるという噂じゃないですか。大葉は抗菌効果も高いので、夏場の食材の傷み防止にも役立ちます。次にみょうがをザクザクと、食べやすい大きさに適当に切っていただければ大丈夫です。 ご飯は炊きたてでも、冷凍ご飯を解凍したものでも構いません。半分に分けて、まずごまを好きなだけ入れてください。そこにみょうが、大葉、桜えびを入れてさっくり混ぜましょう。もうこれだけで素敵な感じになってきました。味付けも特に必要なく、桜えび自体にしっかりと美味しい味がついているので大丈夫です。 おぼろ昆布自体にも食物繊維がしっかり入っているだけでなく、コラーゲンを作る成分も含まれているので、たるみ予防にもなります。味もしっかり出してくれるので入れていただいた方がいいです。大きいおぼろ昆布であれば、海苔代わりに巻いてあげるのもありですよ。もう一方のおにぎりには大葉、みょうがを入れて、鮭をほぐして混ぜます。タンパク質もしっかり取れますし、さっき言ったように紫外線対策にはたくさん摂っていった方がいいです。緑が入っているおにぎりは見た目も良くて、お弁当にもぴったりだと思います。 ちょっと豆知識なんですが、おにぎりは炭水化物ですよね。温かいおにぎりも美味しいですが、炭水化物は冷えて冷たくなるとレジスタントスターチという効果が働いて、血糖値の上昇が少し和らぐんですよ。なので同じ糖質を食べても太りにくい効果が出てきます。おにぎりを握っておいてそのまま冷やして食べると血糖値が上がりにくいという効果もあるので、そういう意味でもおにぎりはすごくいい食材だと思います。 次にお味噌汁です。火を使わないのにどうやってお味噌汁を作るのかと思われると思いますが、まずお椀を用意してください。このお味噌汁は沖縄の家庭でよく飲まれている「カチュー汁」というものです。朝起きた時にお父さんが作っていたりするような、本当に簡単な即席お味噌汁なんですね。 材料は、粗削りか薄削りのかつお節と、お味噌になります。かつお節はかみごたえと風味を楽しみたい方は粗削りのもの、風味を重視したい方は薄削りのものを用意してください。お椀にお味噌を小さじ1杯ほど入れて、かつお節を加えます。お好みで生卵を入れることもあります。そこに熱湯を注ぐだけです。 皆さん、かつお節がめちゃくちゃ美肌効果の高い食材ということはご存知でしたか?かつお節にもEPA・DHAが入っていますが、一番のポイントはコラーゲンを産生するアミノ酸「トレオニン」が含まれていることです。このトレオニンはコラーゲンを産生する際に不可欠な成分です。また、神経が高ぶって眠れないという方には、眠りを促してくれる「グリシン」というアミノ酸も含まれています。グリシンは幸福ホルモンと呼ばれるホルモンの元となる「トリプトファン」を作ってくれて、それが快眠につながるんですね。朝ごはんでしっかり栄養を摂って体を温めることで、夜も眠りやすくなるということです。 カチュー汁はこれが基本のベースですが、ご家庭によって加えるものが違います。生卵を入れるご家庭もあれば、梅干しを入れるご家庭もあります。梅干しにはクエン酸が入っているので疲れを予防する効果もあります。ネギをたっぷり入れるという方もいます。 ではおにぎりを握っていきましょう。ラップを使って握れば衛生的に問題ないです。こちらが鮭入りのおにぎり、こちらが桜えび入りのおにぎりです。どちらもアスタキサンチン、ビタミンEのごま、食物繊維たっぷりの美肌おにぎりになります。こちらが沖縄の伝統的なカチュー汁です。コラーゲンを産生するアミノ酸やリラックスを促すアミノ酸がしっかり入っています。かつお節は「食べる美容サプリ」ともいわれるほど栄養豊富なので、出汁を取った後のかつお節を捨ててしまうのはもったいないです。かつお節を食べながら体を温める即席お味噌汁カチュー汁、ぜひ試してみてください。 火も使わず、切って混ぜてお湯をかけるだけなので、誰でも簡単に作れます。忙しいお母さんがパッと作って家族に食べてもらったり、OLさんがリモートワーク中や会社に持って行ったりするのにも最適です。新田'sキッチンはどんどん簡単になっていきますが、美肌や快眠に役立つ栄養素がたっぷりなお料理を常にご紹介していますので、また次回の新田'sキッチンをお楽しみにしていてください。それでは次の動画でお会いしましょう。さようなら。

Hello everyone, I'm Arata Tomori, an internal medicine and dermatologist. Welcome back to Nitta's Kitchen! I've heard that Nitta's Kitchen recipes are getting simpler and simpler, and today we're not using any fire or stove at all. This is an easy, skin-boosting breakfast made simply by cutting and mixing ingredients. When the weather gets hot, the last thing you want to do is stand over a stove, right? Since I personally want to make breakfast as quickly as possible in the morning, today I'd like to introduce a skin-friendly breakfast that takes just 10 minutes and requires no cooking. Please watch until the end! Let me start by introducing the ingredients. Today's menu consists of miso soup and rice balls (onigiri). The fillings for the onigiri include shiso (perilla) leaves, myoga (Japanese ginger), white sesame seeds, and dried sakura shrimp. We'll also use oboro konbu (shredded kelp). The key ingredient is a store-bought salted grilled salmon — you can find it at convenience stores or in the deli section of supermarkets. Since grilling salmon yourself can be a hassle, using a pre-cooked one makes this recipe quick and easy. Salmon is well known as a skin-boosting food, containing DHA and EPA that enhance skin radiance and strengthen the skin's barrier function. It also contains astaxanthin, which helps prevent the formation of dark spots caused by UV exposure and has antioxidant properties said to be 50 to 60 times stronger than vitamin C. You may know about salmon, but sakura shrimp also contains astaxanthin, plus a good amount of calcium. Shiso leaves add flavor as well as vitamins. Sesame seeds contain sesamin, a powerful antioxidant, and vitamin E, which promotes blood circulation and improves skin tone. Now let's get started — all we need to do is cut the ingredients. Remove the stems from the shiso leaves and chop them finely. Shiso and myoga together really do make everything taste better! Shiso also has strong antibacterial properties, which is great for preventing food spoilage in summer. Chop the myoga into bite-sized pieces — roughly the size of an egg yolk works well. Use freshly cooked rice or thawed frozen rice. Divide the rice into two portions. Add sesame seeds to taste, then mix in the myoga, shiso, and sakura shrimp. Just mix it all together and it already looks wonderful. No additional seasoning is needed since the sakura shrimp provides plenty of flavor on its own. Oboro konbu (shredded kelp) is rich in dietary fiber and also contains components that help produce collagen, making it great for preventing sagging skin. It also enhances flavor, so I highly recommend adding it. If you have large pieces of oboro konbu, you can even wrap them around the rice ball instead of using nori seaweed. For the second onigiri, mix in shiso and myoga with the flaked salmon. This provides a good amount of protein and, as mentioned earlier, is excellent for UV protection. Onigiri with green ingredients like shiso look great and are perfect for lunchboxes too. Here's a little fun fact: onigiri is a carbohydrate, of course. While warm onigiri are delicious, when carbohydrates cool down, a phenomenon called resistant starch occurs, which moderates the rise in blood sugar levels. This means you're less likely to gain weight from the same amount of carbohydrates. So letting your onigiri cool a bit before eating can help keep blood sugar levels lower — another reason why onigiri is such a great food! Now for the miso soup. You might wonder how to make miso soup without using heat, but all you need is a bowl. This is a traditional Okinawan household recipe called "Kachuu-jiru" (かちゅー汁). It's a super simple instant miso soup that fathers in Okinawa often make in the morning. The ingredients are just katsuobushi (bonito flakes) — either coarsely shaved or thinly shaved — and miso paste. Use coarsely shaved bonito if you enjoy texture, or thinly shaved if you prefer a lighter, more aromatic experience. Place about one teaspoon of miso in a bowl, add the bonito flakes, and optionally a raw egg, then simply pour hot water over everything. That's it! Did you know that katsuobushi is an incredibly skin-boosting food? In addition to EPA and DHA, the most notable component is an amino acid called threonine, which is essential for producing collagen. Without it, collagen synthesis becomes difficult. Katsuobushi also contains glycine, an amino acid that promotes relaxation and better sleep. Glycine helps produce tryptophan, which is the precursor to the so-called "happiness hormone," and tryptophan in turn supports restful sleep. Starting your morning with a warm, nutrient-rich miso soup raises your body temperature and helps your body find its rhythm, making it easier to sleep well at night. While this is the basic recipe, different households in Okinawa add different ingredients — some add a raw egg, some add umeboshi (pickled plum), which contains citric acid to help fight fatigue, and others add plenty of green onions. Now let's shape the onigiri. Using plastic wrap keeps things hygienic and easy. Here is the salmon onigiri, and here is the sakura shrimp onigiri. Both are packed with astaxanthin, vitamin E from sesame, and plenty of dietary fiber — truly skin-nourishing rice balls. And here is the Okinawan Kachuu-jiru, full of collagen-producing amino acids and relaxation-promoting amino acids. Katsuobushi is sometimes called an "edible beauty supplement" because of how nutritious it is, so don't waste it by throwing it away after making dashi broth — eat it! This entire meal requires no cooking — just cut, mix, and pour hot water. Anyone can make it, no matter how busy they are. Whether you're a busy mom making a quick breakfast for your family, a working woman eating at home during remote work, or someone heading into the office with onigiri in hand, this recipe is perfect for you.
