Hello everyone, this is Arata Tomori. Today I'd like to introduce 5 slimming food ingredients that I want you to eat in summer, so please watch until the end. In the hot summer, you tend to wear lighter clothing, right? At that time, you might notice things like "Wait, my stomach..." or "my upper arms..." and become concerned about your body shape in various ways. However, I don't think losing weight by not eating is a good approach. So wouldn't it be great if there were foods that let you eat properly while still helping you develop a leaner body constitution? That's why today I want to introduce 5 such ingredients. And surprisingly, products made with these 5 ingredients are sold at convenience stores too. So I'd like to introduce those to you as well, so please watch until the end. The first ingredient is soba (buckwheat noodles). Many people intuitively feel that soba is healthier than udon or rice, right? Of course, buckwheat flour contains rutin and minerals, so you probably already know it's good for your body, but it's actually also great for dieting. This is because while soba digests quickly, it contains resistant starch that is not easily absorbed by the body. What does this mean? Foods that digest slowly but absorb quickly - like rice or udon - take time to digest, but when absorption is fast, blood sugar levels spike rapidly. This rapid rise in blood sugar can cause inflammation in the body. That's why, for diabetic patients, doctors often recommend eating soba over udon or similar foods even with the same calorie count. Also, since this resistant starch in soba is not easily absorbed, it can reach the large intestine. When it reaches the large intestine, this resistant starch becomes food for gut bacteria. This, in turn, helps relieve constipation and reduce bloating. By reducing bloating, it's also known to help suppress the absorption of cholesterol and neutral fats (triglycerides). So if you're at a convenience store thinking "should I get udon?" or "should I get hiyashi chuka (cold ramen)?", I recommend choosing soba instead. The second ingredient is tororo (grated yam). Tororo contains a component called resistant starch. When you hear about dietary fiber, have you heard the terms "soluble" and "insoluble"? Insoluble dietary fiber is found in foods like burdock root - the kind of food that seems obviously high in fiber - and it increases stool bulk. This is important, but what's actually really important is soluble dietary fiber. This type of fiber not only increases bulk but also serves as food for gut bacteria. So we're told to consume both soluble and insoluble fiber, but this resistant starch actually provides both the functions of soluble fiber and insoluble fiber. There's another great thing about it too - the large intestine is really long, right? So gut bacteria vary depending on whether they're near the entrance of the large intestine or toward the end. Resistant starch is said to become food primarily for the gut bacteria in the rectum, so it's also said to increase the frequency of bowel movements. Also, since it is dietary fiber, it suppresses rapid spikes in blood sugar, and in that sense, it also suppresses the absorption of neutral fats into the bloodstream. So putting tororo on soba, as I mentioned earlier, makes for an excellent diet food. Convenience stores sell tororo soba, so I definitely recommend trying it. The third ingredient is cold rice. This also contains the same resistant starch as tororo mentioned earlier. Earlier, when talking about soba, I said that foods like rice digest slowly but absorb quickly. Rice actually has this characteristic. It's known that the fresher the cooked rice, the faster the absorption. However, when rice becomes cold, it actually contains more resistant starch. So while freshly cooked rice is extremely delicious, as I mentioned, it digests poorly but gets absorbed quickly, causing blood sugar to spike. Cold rice, on the other hand, contains this resistant starch, so there's less of a sudden rise in blood sugar. Plus, as I mentioned, resistant starch becomes food for gut bacteria and boosts intestinal peristalsis. This leads to relief from constipation and other benefits. While freshly cooked rice is delicious, for dieting purposes, eating it cold is the key point. When you buy an onigiri (rice ball) at a convenience store, you might want to heat it up, but for dieting purposes, it's better to eat it as is rather than heating it. So choosing an onigiri that's delicious even when eaten cold, without warming it, is the key point. The fourth ingredient is nori (seaweed). Nori contains a component called resistant dextrin. This also becomes food for gut bacteria and boosts intestinal peristalsis, and it's also said to suppress neutral fat. Of course, it's fine to just eat seaweed, but it's known that applying heat to nori increases the resistant dextrin content, so eating dried nori is known to help suppress neutral fat and provide food for gut bacteria. When you go to a convenience store, onigiri always comes with nori, right? So it's known that eating the cold type wrapped in nori actually results in less blood sugar spike and helps relieve constipation more than eating a warm onigiri. The fifth ingredient is katsuobushi (dried bonito flakes). Katsuobushi contains a resistant component called resistant protein. This too becomes food for gut bacteria and helps suppress neutral fat. Also, katsuobushi has umami components, right? It's known that this umami component suppresses appetite, so consuming foods with a rich dashi (broth) flavor is known to help suppress the desire to overeat. So of course, drinking miso soup that contains dashi, or the soba mentioned earlier that also contains dashi - consuming these kinds of foods is known to both provide food for gut bacteria and slightly suppress appetite. So please try to incorporate katsuobushi or dashi into your diet. Do you know what these 5 foods I discussed today have in common? All of them have "resistant" or "indigestible" something attached to their name. "Indigestible" (nan-shoka-sei) might sound like it means poor digestion in a bad way, but it actually means the substance reaches the large intestine without being digested. By reaching the large intestine, it becomes food for gut bacteria and activates intestinal peristalsis. This improves bowel movements, and as gut bacteria increase, it's said to have various effects beyond just dieting. All indigestible substances that reach the large intestine are collectively called "luminacoids," a term that has recently come into use by the dietary fiber society (Japan Society for Dietary Fiber Research). So even if you can't remember terms like resistant dextrin, resistant protein, or resistant starch, it's known that consuming what's called luminacoids helps with dieting and provides food for gut bacteria. So along with today's 5 ingredients, searching for the term "luminacoid" might be a good approach as well. To summarize, what's effective for dieting is consuming foods that digest easily but are not easily absorbed - foods that don't cause rapid blood sugar spikes. The key points are: things that become food for gut bacteria, things that suppress neutral fat, and things that suppress appetite. These are: soba, tororo, cold rice, nori, and katsuobushi - these 5 items. Substances that aren't digested and reach the large intestine to become food for gut bacteria are recently called "luminacoids" by the dietary fiber society. Consuming these kinds of foods, I believe, is very effective for dieting, so please try choosing foods from this perspective as well. How was that?
