皆さんこんにちは、内科・皮膚科医の友利新です。第3弾になりますが、新田つキッチン、今日も始まります。よろしくお願いします。 1回目でもう企画ダウンになるかと思いきや、意外と皆さんのコメントも温かく、「手元が危なっかしいけれども好感が持てた」とか、「料理は大したことないけど栄養が良さそうだった」というような温かいコメントをたくさんいただいたので、今日もそんな感じで新田つキッチンを始めていこうと思います。 今日はですね、私が本当にお家に何もご飯がないときにパパッと作る、簡単デミグラスソースをご紹介したいと思います。このデミグラスソースは簡単なだけじゃなく、美肌やストレス軽減に役立つ栄養素がたっぷり入っています。最後までご覧ください。 材料はこれだけです。ポイントはサバの味噌煮缶があるかどうかになります。正直、野菜は何でも大丈夫です。トマトはあった方がいいですが、サバの味噌煮缶とトマトがあればほぼ完成です。今日は冷蔵庫に人参・玉ねぎ・ナスがあったのでこれを入れました。パプリカやピーマンなど、何でも合わせられます。 では早速作っていきましょう。その前に一つ訂正をしたいと思います。以前の動画「食べてはダメなもの5選」の中で、加工肉や缶詰はやめましょうという話をしました。そうしたら「先生、サバ缶もダメなんですか?」というご質問をいただいて、そうだ、サバ缶も缶詰だったなと気づきました。私が問題にしていた缶詰とは、ポークランチョンミートのような加工肉の缶詰のことで、缶詰すべてが悪いわけではありません。ごめんなさい。むしろサバ缶のような魚の缶詰は非常に理にかなっていますので、そこだけ訂正させてください。 では早速、玉ねぎを切っていきます。次に人参です。カレーではないので、イチョウ切りで薄めに、食べやすい大きさに切ってください。次は茄子です。茄子はあってもなくても大丈夫ですが、これからの時期に美味しくなってきます。茄子は皮を剥かないでください。皮にポリフェノールがたっぷり含まれていますので、そのままでお願いします。 続いてトマトです。できれば大きいトマトを丸ごと1個使ってください。トマトは美肌に欠かせない食材です。トマトといえばリコピンですが、生で食べるより加熱した方がリコピンの吸収が高まります。さらに、サバ缶に含まれるEPAやDHAなどの良質な油と一緒に摂ることで、抗酸化作用の高いリコピンの吸収がより効果的になります。これがこの簡単デミグラスのポイントです。トマトはザク切りにしてください。後で潰していくので大丈夫です。 では調理を始めます。フライパンを熱して油を入れます。私がいつも使っているのはカメリナオイルです。オメガ3・6・9のバランスが非常に良く、加熱してもオメガ3が壊れない油です。カメリナオイルがなければオリーブオイルでも大丈夫です。サバ缶に油が含まれているので、炒め油はそれほど多くなくて大丈夫です。 まず玉ねぎから炒めます。透明になるくらいまで炒めてください。サバの味噌煮缶はそのままでも食べられますので、しっかりと野菜に火を通しておくことがポイントです。人参も薄く切ったので、ここでしっかり火を通しておきましょう。 次に人参と茄子も一緒に加えます。人参にはβカロテン(ビタミンA)が豊富に含まれており、肌のバリア機能を高め、肌の新陳代謝を促進してくれます。茄子の紫色の皮にはポリフェノールが多く含まれており、これも抗酸化作用があります。茄子は良い油をしっかり吸ってくれるので、今回のサバ味噌デミグラスにぴったりな食材です。 野菜全体に火が通ったら、サバの味噌煮缶を加えます。デミグラスソースには甘みがありますが、サバの旨味とサバ味噌の甘みがそれを補ってくれます。また、缶詰を使うことが大きなポイントです。EPAやDHAは酸化しやすく、空気に触れると酸化してしまい効果が薄れますが、缶詰は密閉されているため酸化せず、良質なEPA・DHAをそのまま摂取できます。 EPA・DHAの働きとしては、肌の水分量を上げてバリア機能を整えてくれます。バリア機能が低下すると外部からの刺激が入りやすくなり、かゆみの原因になります。乾燥性皮膚炎やアレルギー性皮膚炎の改善にも効果的です。また、ストレスを軽減する効果もあります。ある実験では、普段あまり魚を食べない20〜30代の学生に、毎日EPA・DHAが豊富な魚を10日間食べてもらったところ、ストレスホルモンであるコルチゾールの値が低下し、ストレスへの耐性が高まったことが確認されています。春の新生活などでストレスを感じる方にも、ぜひおすすめです。 缶詰の汁にもDHAやEPAが豊富に含まれていますので、捨てずにそのまま加えてください。サバを潰しながら全体に火を通します。 次にトマトを加えます。先ほどお伝えしたように、油と一緒に摂るとリコピンの吸収率が上がります。生で食べるときもオリーブオイルをかけるといいですよ。リコピンには日焼けを軽減する効果もあり、体内にリコピンがある状態では同じ日差しでも肌が赤くなりにくいというデータもあります。これからの季節に積極的に摂りたい栄養素です。 トマトを入れたら潰しながら混ぜていきます。次に調味料としてトマトケチャップを加えます。量は入れる野菜の量に合わせて目分量で大丈夫です。全体的にデミグラスらしい色になれば目安です。サバ感が気になる方も、潰しながら炒めることで魚の存在感が薄まり、食べやすくなります。お子様にも喜んでもらえると思います。 最後に味を見て、酸味が強すぎる場合や塩気が足りない場合はお好みで塩を少々加えてください。これで簡単・美肌サバデミグラスソースの完成です。 盛り付けていきましょう。ご飯と一緒にどうぞ。上にデミグラスソースをかければ、カフェ風の仕上がりになります。アーモンドや野菜をトッピングすると、さらに見栄えが良くなりますね。 入っている栄養素をもう一度まとめます。サバ缶にはEPA・DHAが豊富に含まれており、酸化していない良質な油が摂れます。この油は肌の水分量を上げてバリア機能を高め、ストレスや睡眠の改善にも役立ちます。マスク生活などでバリア機能が低下していると感じる方にも特におすすめです。トマト・ケチャップにはリコピンという抗酸化物質が含まれており、加熱して油と一緒に摂ることで吸収率が高まります。紫外線が強くなるこれからの季節にぴったりの一品です。 いかがでしたか?新田つキッチン、今日も栄養たっぷりで非常に簡単なレシピをご紹介しました。またご要望があれば、栄養たっぷりの簡単料理をご紹介しますので、チャンネル登録もよろしくお願いします。では、また次の動画でお会いしましょう。さようなら。

Hello everyone! I'm Arata Tomori, an internal medicine and dermatologist. Welcome to the third episode of Nitta's Kitchen! I wasn't sure the series would continue after the first episode, but I received so many warm comments from you all — things like 'Your knife skills looked a little shaky but it was endearing!' and 'The cooking was simple but the nutrition looked great!' — so here we are again. Today, I'd like to share a quick and easy demi-glace sauce recipe I make when there's almost nothing left in the fridge. Not only is it simple, but it's also packed with nutrients that support beautiful skin and help reduce stress. Please watch until the end! The ingredients are minimal. The key item is canned mackerel in miso sauce. The vegetables are really up to you — as long as you have the mackerel can and a tomato, you're almost done. Today I had carrots, onion, and eggplant in my fridge, so I used those. Paprika, bell pepper — anything works. Before we start cooking, I'd like to make a correction. In a previous video titled 'Five Foods You Should Never Eat,' I mentioned avoiding processed meats and canned goods. Some of you then asked, 'Does that mean canned mackerel is bad too?' — and I realized I hadn't been clear. What I meant by 'bad canned goods' was things like canned processed meats (such as luncheon meat). Not all canned goods are bad. In fact, canned fish like mackerel is nutritionally excellent. I apologize for the confusion! Now let's get cooking. First, chop the onion. Then slice the carrot into thin, half-moon shapes — not large chunks like you'd use for curry. Next, cut the eggplant into similar-sized pieces. Please don't peel the eggplant — the purple skin is rich in polyphenols, which are powerful antioxidants. For the tomato, use one whole large tomato if possible. Tomato is an essential ingredient for healthy skin. You're probably familiar with lycopene — tomatoes are full of it. While many people eat tomatoes raw, cooking them actually increases lycopene absorption. Combined with the healthy fats in the mackerel can (EPA and DHA), the lycopene becomes even more bioavailable. This is the key concept behind this recipe. Cut the tomato into rough chunks — you'll be mashing it later anyway. Heat a frying pan and add oil. I use camelina oil, which has an excellent balance of omega-3, -6, and -9 fatty acids and is stable under heat — meaning the omega-3s don't break down when cooked. Olive oil works just as well if you don't have camelina oil. Since the mackerel can contains oil, you don't need much extra. Start by sautéing the onion until translucent. Then add the carrot and eggplant. Because we're not simmering this like a traditional demi-glace, make sure the vegetables are fully cooked at this stage. Carrots are rich in beta-carotene (vitamin A), which strengthens the skin's barrier function and promotes cell turnover. Eggplant's purple pigment contains polyphenols with antioxidant properties. Eggplant also absorbs oil well, which is why using a good-quality oil matters here. Once the vegetables are cooked through, add the canned mackerel in miso sauce. The slight sweetness of the miso complements the depth of a demi-glace sauce beautifully. More importantly, using canned fish is the nutritional highlight of this recipe. EPA and DHA — the omega-3 fatty acids in mackerel — oxidize easily when exposed to air, which diminishes their benefits (and may even make them harmful). Because canned fish is sealed immediately after processing, the EPA and DHA remain un-oxidized, meaning you get the full nutritional benefit. EPA and DHA help increase the skin's moisture levels and strengthen its barrier function. A compromised skin barrier allows external irritants in, causing itchiness and inflammation — so these fatty acids are excellent for dry skin conditions and allergic skin conditions. Additionally, there's evidence that EPA and DHA reduce stress. In one study, young adults in their 20s and 30s who rarely ate fish were asked to eat EPA/DHA-rich fish every day for 10 days. After the 10 days, their cortisol levels (a key stress hormone) were lower, and they showed greater emotional resilience when faced with stressful tasks. For anyone navigating the stress of a new school year or job change, this is especially relevant. Don't discard the liquid from the can — it's rich in DHA and EPA. Add it all to the pan and gently mash the mackerel as you stir everything together. Next, add the tomatoes. As mentioned, cooking tomatoes with oil significantly boosts lycopene absorption — so even when eating raw tomatoes, try drizzling them with a little olive oil. Interestingly, there's data suggesting that regular lycopene consumption makes skin less prone to sunburn, as the antioxidant activity of lycopene in the body reduces UV-induced redness. With UV rays intensifying in the coming months, this is a great nutrient to prioritize. Mash the tomatoes into the sauce as it cooks. Then add tomato ketchup. The amount is flexible — eyeball it based on the amount of vegetables you used, aiming for a rich, demi-glace-like color. Breaking up the mackerel as it cooks also reduces the 'fishy' appearance, making it more appealing to children who might otherwise resist eating fish. Finally, taste the sauce and adjust with a pinch of salt if needed — if it's too tangy or lacks seasoning. And that's it — your easy, skin-boosting mackerel demi-glace sauce is done! Serve over rice. Plate it up and it looks almost like something from a café. Add some almonds or fresh vegetables on top for an even more polished presentation. To summarize the nutritional highlights: Canned mackerel provides un-oxidized EPA and DHA, which boost the skin's moisture and barrier function, reduce stress, and may improve sleep quality — ideal for those dealing with skin barrier issues from prolonged mask-wearing or everyday stress. Tomato and ketchup deliver lycopene, a potent antioxidant whose absorption is enhanced by heat and healthy fats. This dish is perfectly timed for the season when UV exposure starts to increase.
