皆さんこんにちは、友利新です。9月ももう中盤を過ぎてどんどんと秋らしくなってきましたね。秋といえばそう、食欲の秋じゃないですか。でもせっかく食べるなら体にいいものを食べたいと思いませんか?なので今日は秋に綺麗になりたいなら絶対に食べてほしい食材5つをご紹介したいと思いますので最後までご覧ください。
本当に秋って栄養価の高い食べ物がどんどんと出てきてくるんですね。なのでやっぱり秋の味覚、しっかりいいものを食べていきたいと思うので、では早速秋に食べていただきたい食材、まず一つ目、サンマです。もうサンマといえばね、もう秋ですよね。秋のサンマっていうのは油が乗っていて、もうほんと身もふっくらしていて美味しいんですが、もちろんそれだけではないです。サンマにはオメガ3の油がたくさん入っているんですね。
オメガ3って言ったらもう皆さんご存知だと思うんですが、体の炎症を抑えるような働きがあります。私たちってどうしても外食したりとか、あとは外でなんか加工食品を食べることが多いんですが、この加工食品の中にはオメガ6と言って体を炎症に傾けるような油が結構入っているんですね。ですがそれを抑えるのがオメガ3です。
このオメガ3っていうのはやっぱり青魚とかあとは亜麻とかエゴマとかに入っているものになります。でこのオメガ3ってなかなか取れないんですよ。だってエゴマ油とかアマニ油とかってなかなかね、あの料理に使えない。なぜかっていうと熱を加えてしまうとこのオメガ3っていうのは変性してしまうんですよ。
でこれってサンマにあの含まれているオメガ3もそうなんですね。なのでサンマの塩焼きもすごくいいんですけれども、秋になると新鮮なサンマがたくさんあるので、例えばサンマのお刺身みたいなものもあの出てくると思うので、オメガ3だけを考えたらこういう新鮮な時期にあの、お刺身とかを食べるのがいいかなと。でもやっぱりそうじゃなかったとしても、まぁ多少オメガ3はあの壊れてしまいますけれども、それでもしっかりと油が乗ったサンマを食べることによってオメガ3ね、しっかりと取ることができますから、あのぜひこの時期はもし新鮮なものが手に入れば、お刺身とか生で食べていただきたいですし、そうじゃなかったとしてもこのオメガ3をたっぷり食べられるようにサンマ、あの食卓にね並べてみるといいんじゃないかなと思います。どっか食べに行ってね、サンマ焼き定食みたいなのがあったらぜひあの選んでいただければいいんじゃないかなと思います。
続いて2つ目がアサリです。えっ、「アサリって春では?」って思う方もいらっしゃると思うんですが、実はね秋もアサリって旬の一つになります。アサリってなんか地味なやつなんですけど、実はビタミンB12だったりとか亜鉛とか鉄分がすごく入っている食材になるんですね。
で特に女性っていうのはやっぱり毎月月経があって出血があるので鉄分がどうしても減りやすい。ですがなかなか鉄分を補給することが難しい場合はなんかアサリとかでしっかりと取ってほしいなと。でちょっと鉄分が少なくなるともちろん貧血気味になるんですけど、そうすると例えば抜け毛だったりとか、あとは肌の調子が悪くなったりとか、そういったこともおきてきますので。あとはあの皮膚の新陳代謝が悪くなったりとか。なので鉄っていうのは過剰でもダメなんですけど少なすぎてもダメなので、やっぱりこういった感じで秋の味覚で取っていただけると嬉しいかなと思います。
もう一つアサリには亜鉛が入っているんですね。で亜鉛っていうのも、例えば味覚とかを司るんですけれども、例えば免疫機能を調整したりとかっていうこともありますし、細胞の生まれ変わりを助けるとも言われているので、亜鉛もなかなか亜鉛だけを取りたいみたいな感じはできないので、こう、しっかりと食事から取っていくっていうのが健康そして美容につながるのかなと思うので、ぜひぜひ今が旬のアサリも食べてみてください。
続いて3つ目が里芋です。なんか里芋って地味かもしれないんですが、実はスーパーフードじゃないかなというふうに言われている食材でもあるんですね。というのも最近は腸内環境がめちゃめちゃブームじゃないですか。やっぱり腸内環境を整えることで免疫機能を調整したりとか、もちろん水分量が上がって肌がね、キメ細くなると乾燥がなくなるとか、あとは腸内環境を整えることで、まぁちょっとうつっぽい症状もなくなるんじゃないかとか、そういった意味ではすごく腸内環境がクローズアップされているんですが、じゃあ腸内環境を整えるためにはどういったものが必要かというと、食物繊維というものが挙げられるんですが。
ちょっと前までは食物繊維というのは不溶性水溶性って言ってネバネバしたものだったり硬いもの、例えばごぼうとかに入っているのは不溶性のものだったり、ちょっとネバネバの海藻とかに入っているような水溶性のものだったりに分けられていたんですが、最近のトレンドはそこではなくて、発酵性の食物繊維っていうものにクローズアップされているんですね。
この発酵性の食物繊維っていうのは日本食物繊維学会ではレジスタントスターチっていう風にも言われているんですが、このレジスタントスターチ、発酵性の食物繊維って何がすごいかっていうと、食物繊維っていうのは大腸にいる腸内細菌がこの食物繊維を発酵させていろんな物質を作ることによって体に有益なものが出るということなので、水溶性とか不溶性とかっていう分類じゃなくて、どれぐらい大腸で腸内細菌で発酵ができるかっていうような観点から見ているのがこの発酵性の食物繊維なんですね。
この発酵性の食物繊維が多いっていうことは、大腸でそれだけ腸内細菌が発酵してくれて、腸内細菌の餌になってくれたり、短鎖脂肪酸というのは体に有益なものをいっぱい作ってくれるよということになります。もちろんこの里芋もですね、発酵性の食物繊維がたっぷり入っているものになります。
なんとなく食物繊維っていうとなんかお野菜、ごぼうとかなんか葉野菜とかレタス何個分みたいな感じだと思うんですが、実は里芋もそうなんですが、この時期旬なあの、さつまいもとか結構芋類っていうのは、この発酵性の食物繊維が多いんですね。発酵性の食物繊維が多いっていうことは腸内細菌がね、それを発酵させて体にプラスになるようなものを作ってくれて、あとは腸の動きがしっかり良くなるんですね。
腸内細菌の餌になるので腸内環境がめちゃめちゃ良くなるんですよ。だからこそなんかね、お芋類ってなんか太るとかっていうイメージあると思うんですけれども、そういったあの考え方で、まぁちょっと古いなっていうことも言われていて、里芋をはじめさつまいもみたいな芋類っていうのは積極的に取っていく。それによって腸内環境を整える、食物繊維がたくさん入っているので、腸内環境を整える、それによっていろいろな、もちろんお肌だったら水分量が多くなったりとか、あとは免疫を調整してくれたりとか、うつを調整してくれたりとか、そういったことが言われているので、秋って本当に里芋をはじめこういう芋類が美味しくなる時期ですから、自分のためにも、そして腸内細菌のためにも、里芋をはじめ色んなお芋類を秋はぜひぜひ食べていただきたいなと思います。
続いて4つ目は舞茸です。舞茸って言うとなんかでも1年中あるようなイメージですけど、実は舞茸てもちろん秋が旬なんですね。舞茸ももちろんさっきお話しした食物繊維もたくさん入っているので、まぁ腸内環境にはいいんですが、もう一つ良いのはですね、実はビタミンDが豊富に入っている食材になります。
ビタミンDっていうとまぁね、免疫を調整したりとか、あとはカルシウムの吸収を促進してくれるので、骨を強くするっていうことで皆さんご存知だと思います。でどうしてもビタミンDっていうのは日光を浴びて体の中で生成されるものになるので、秋になってくると夏に比べて日照時間が少なくなってくるので、ビタミンDが体の中で少なくなりがちなんですね。
そうするとちょっと風邪引きやすいとか、あとはちょっとね気分が悪くなったり、落ち込んだりということもあるので、ビタミンDっていうのはしっかりと秋冬は食材で食べていったり、もし補えないんだったらサプリメントを補ったりということが言われているので、もちろんね食材から食べるのが一番いいですから、舞茸にはですね、ビタミンDがたくさん入っていますので、秋の味覚の一つですから、しっかりと舞茸も食べていただけるといいかなと思います。
続いて5つ目は梨です。梨も私も好きな果物の、まぁベスト3には入るぐらい大好きなんですが、もう旬ですね、ピークでもしかしたらもうちょっと終わりかけなんですが、梨って本当にみずみずしくって、食べてもほんと美味しいんですよね。
これ美味しいだけじゃなくって、体のむくみを取るにも最適な果物なんです。というのも梨にはですね、カリウムが入っておりますので、塩分を取りすぎた方っていうのは、カリウムを取ることで自然にね、水分バランスが整える。ナトリウムとカリウムのバランスを整えて、余分な水分を外に排出してくれるという機能がありますので、デザートの一つに、ちょっとね、むくんでるなぁとか、なんか水分バランスがおかしいなっていう方は、まぁ、むくみが気になる方が梨を食べていただけると、ちょっとね、むくみが予防できたりするんじゃないかなと思います。
まとめると、秋に食べてもらいたい食材は、一つ目オメガ3たっぷりのサンマ、そして鉄、亜鉛が豊富なアサリ、発酵性の食物繊維がたっぷり入ってる里芋をはじめの芋類、ビタミンDが豊富な舞茸、カリウムが入っている梨、この5つになります。もちろんね秋が一番美味しい時期なんですが、この食材って通年通して結構あると思うので、まぁ自分の健康が気になるよっていう方は、食卓にね、ちょっとずつこの5つ並べていただけるといいんじゃないかなと思います。

Hello everyone, this is Arata Tomori. We're already halfway through September and autumn is really coming in nicely, isn't it? When we think of autumn, we think of the season for good appetite, right? But when we're going to eat, don't you want to eat something good for your body? So today, I'd like to introduce five autumn foods that you absolutely should eat if you want to become beautiful in autumn, so please watch until the end.
Autumn really does bring out foods with high nutritional value. So after all, autumn flavors—I really want to eat good things, so let me quickly introduce autumn foods you should eat. First, saury fish. When we talk about saury, we think of autumn, right? Autumn saury is oily, the flesh is plump and delicious, but of course that's not all. Saury contains plenty of omega-3 oil.
Omega-3—I'm sure you all know about it—has the ability to reduce inflammation in the body. We tend to eat a lot of processed foods when eating out or outside, and these processed foods contain omega-6, which is an oil that causes inflammation in the body. But omega-3 suppresses that. Omega-3 is found in blue fish, flaxseed, perilla, and so on. The problem is that omega-3 is hard to get. Oils like perilla oil and flaxseed oil aren't easy to use in cooking, because when you apply heat, this omega-3 denatures.
And the omega-3 contained in saury is the same way. So while grilled saury is great, when autumn comes and fresh saury is abundant, things like saury sashimi come out, so if you're only thinking about omega-3, it's good to eat it raw during this fresh season. But even if that's not the case, some of the omega-3 does degrade, but you can still get good omega-3 by eating oily saury. So if you can get fresh saury this season, I'd definitely recommend eating it raw as sashimi, and even if not, you should try putting plenty of saury on your table so you can eat lots of this omega-3. If you go out to eat somewhere and there's a grilled saury set meal, I'd recommend choosing that.
Next, the second food is clams. Some of you might think, "Wait, aren't clams a spring food?" but actually autumn is also peak season for clams. Clams seem plain, but they actually contain plenty of vitamin B12, zinc, and iron.
Women in particular lose iron easily because they menstruate every month. But if it's difficult to supplement iron, I'd recommend getting it from clams. When iron gets a bit low, you become anemic, and that can cause things like hair loss and poor skin condition. And your skin's metabolic turnover gets worse. So iron is like that—too much is bad and too little is also bad, so I'm happy if you can get it from autumn flavors like this.
Another thing clams contain is zinc. Zinc plays a role in things like taste sensation, and it also helps adjust immune function and aid in cell regeneration. Since you can't really get zinc from just zinc supplements, I think it's important to get it properly from your diet, which leads to both health and beauty. So please definitely try eating clams while they're in season now.
Next, the third food is taro. Taro might seem plain, but it's actually being called a superfood. That's because recently the gut microbiome has become a huge trend, right? By maintaining your gut microbiome, you can regulate immune function, increase skin moisture, improve skin texture, reduce dryness, and it's even said to help with depressive symptoms. In that sense, gut health is really being highlighted. So what's needed to maintain gut health? Food fiber is mentioned.
Until recently, dietary fiber was classified as either insoluble or soluble—soluble fiber being the sticky kind, insoluble being the hard kind like in burdock root, and soluble fiber like in seaweed. But the recent trend has moved away from that to focus on fermentable dietary fiber. The Japanese Dietary Fiber Society calls this resistant starch, and this fermentable dietary fiber is special because dietary fiber is fermented by gut bacteria in the large intestine to produce various substances, creating beneficial compounds for the body. So rather than classifying it as soluble or insoluble, it's about how much the gut bacteria can ferment it in the large intestine. That's the key with fermentable dietary fiber.
When there's plenty of fermentable dietary fiber, the gut bacteria in the large intestine ferment it, provide food for the gut bacteria, and produce short-chain fatty acids and other beneficial substances for the body. Of course, taro is also full of this fermentable dietary fiber.
When we think of dietary fiber, we usually think of vegetables like burdock root or leafy greens like lettuce, but taro is also like that. And seasonal autumn foods like sweet potatoes—actually root vegetables in general contain lots of this fermentable dietary fiber. Because there's lots of fermentable dietary fiber, the gut bacteria ferment it and produce beneficial compounds, and your intestinal movement improves. Since it becomes food for gut bacteria, your gut microbiome becomes really healthy.
That's why some people think root vegetables make you fat, but that's considered outdated thinking now. Root vegetables like taro and sweet potatoes should be eaten actively. They improve your gut health, contain lots of dietary fiber, so your gut environment improves, your skin gets more moisture, your immune function is regulated, and mood is improved. Since autumn is really the season when these root vegetables taste best, for your own sake and for your gut bacteria, please eat lots of different root vegetables, especially taro, in autumn.
Next, the fourth food is maitake mushroom. Maitake seems like something available year-round, but actually maitake is in season in autumn. Maitake also contains plenty of the dietary fiber I mentioned before, so it's good for gut health, but the other great thing is that it's rich in vitamin D.
Vitamin D—as you probably know—helps regulate immunity and promotes calcium absorption, strengthening bones. But vitamin D is something that's produced in your body when you get sunlight. So when autumn arrives and there's less daylight than in summer, vitamin D becomes scarce in your body. This can make you catch colds more easily or feel down and depressed. So vitamin D needs to be eaten from food sources in autumn and winter, or if you can't get enough, you might take supplements. Of course, getting it from food is best, and maitake contains plenty of vitamin D. Since it's one of autumn's seasonal foods, please definitely eat plenty of maitake.
Finally, the fifth food is pear. I also love pears—they're in my top 3 favorite fruits—and they're at peak season now, though maybe they're starting to wind down. Pears are so juicy and delicious when you eat them. But beyond being delicious, they're perfect for reducing puffiness. That's because pears contain potassium, so if you've taken in too much salt, potassium helps naturally balance water and sodium-potassium balance, expelling excess water. So as a dessert, if you're feeling puffy or your water balance seems off, eating pears can help prevent swelling.
To summarize, the autumn foods you should eat are: first, saury packed with omega-3; second, clams rich in iron and zinc; third, root vegetables like taro packed with fermentable dietary fiber; fourth, maitake rich in vitamin D; and fifth, pears containing potassium. Of course autumn is when these taste best, but these foods are available year-round, so if you're concerned about your health, you can put all five of these on your table little by little.
