皆さんこんにちは。皮膚科医の友利新です。今日もですね始まりました「あらたのキッチン」になります。前々回ですかね、私がケールの料理を何個か、スープとサラダとご紹介したら、ケールがなかなか手に入らないと。なのでケール以外でケールと同じような感じで栄養素が取れるお野菜なんかないですか、っていうコメントが多かったので、今日はケールに代わる栄養がいっぱいある、そして簡単でおいしいお野菜をご紹介しようと思います。それプラス皆さんね、簡単で好きといったらパスタだと思いますので、今日はケールに代わるお野菜プラス簡単なパスタを使った美肌パスタを作っていきたいと思いますので、最後までご覧ください。
では早速材料になります。これだけです。いつもね私のお料理って簡単というか材料も少ないんですが、栄養はたっぷりなのでそこはちゃんと頭に入れといてください。今日のメインになるのはこちら、ルッコラになります。ルッコラって前回お話ししたケールと同じアブラナ科の植物になるんですね。アブラナ科の植物なので、デトックス作用というかね、抗酸化作用も多いし、あとは美肌になるACEと呼ばれているビタミンもたくさん入っています。ビタミンAというのは体の中に入ってくるとベータカロテンというものになるんですけども、1g中3600mg入っていると言われていて、ビタミンAはすごく豊富に入っているんですよ。ビタミンAというのは皮膚の粘膜の修復に関係していたり、潤いをプラスしてくれたりするので、肌のバリア機能をアップさせるということもあります。
プラスビタミンCですね。ビタミンCもレモンの2倍あるんですよ。ビタミンCとビタミンAというのは、いつも私、美容食品でも入れましょうってお話してるんですけど、食べることにもすごくポイントになります。なので、ビタミンC、ビタミンAがたっぷりのルッコラ、しっかりと今日はメインに使ったパスタにします。ルッコラって言うと付け合わせな感じですけど、今日はこのルッコラがメインになっています。
あとはですね、ミネラル分もすごい入っていて、カルシウム、カリウムっていうのも入っています。あとは妊活の時に必要な葉酸というのも大量に入っているので、要はこのお野菜だけでビタミンもミネラルも取れる。あと食物繊維でしょ。食物繊維が取れると蠕動運動が促されて腸内環境が整うと、肌の水分量って上がるんですよ。なので肌の透明感も出てきますね。だからビタミンとミネラルで肌のバリア機能をアップさせる、だから肌の透明感を出していくっていう万能なお野菜になっていると思いますので、今日はこちらをメインに使います。
もう一つはサバの水煮缶になります。正直このサバの水煮缶が今日のタンパク質、あとは前回もお話ししたEPAとかDHAもしっかり入っているので、これがもう味付けのすべてになります。前回もお話ししましたが缶詰っていうのはお魚を作ってその場で詰めているので、EPA、DHAっていう抗酸化作用の強いオメガ3系の脂が酸化していない状態なんですね。普通にEPAとかDHA取ってますよっていう人も、実はサプリで酸化していることが多いよっていう研究データもあるので、できればEPAとかDHAっていうのは生のお魚だったり、お魚で取って欲しいんですが、なかなか自分で魚料理するのがめんどくさいっていう時に缶詰って最強なんですね。なので今日はこのEPA、DHAがたっぷり入って、そしてうまく凝縮されたサバの水煮缶と、先ほどからお話ししているケールに変わる美肌野菜のルッコラ、この2つがメインのパスタを作っていきます。
まずはお湯をたっぷり沸かしてください。これが1つのポイントにはなるんですけれども、パスタを茹でていくんですが、ここでポイントなんですけれども、パスタはいつも以上にお塩をたっぷり入れてください。今日使ったのがイタリアンロックソルトっていう、粗塩みたいなものになって、こんな感じの粗塩になってるんですけど、これをいつも以上にたっぷり入れてあげることがポイントです。そうするとパスタに塩気がしっかりと入っていくので、ここで味がちょっと薄くても大丈夫という感じになります。なのでお塩は結構たっぷりめに入れてください。
パスタなんですが、こちらのパスタを使っています。有機小麦のリングイネなんですが、ポイントはリングイネになってます。ちょっと平麺なんですね。そっちの方が塩気を吸ってくれるかなと思って平打ちのパスタにしてみました。パスタでもいろいろ種類あると思うんですが、私はこの小麦が有機小麦を使っているものを使っています。でもこれは何でもいいと思います。ちょっと2人前なので、これぐらいですね。茹で時間が7分って書いてあるんですけど、気持ちちょっとアルデンテな感じにしたいので、6分くらいで出していきたいと思います。
じゃあまずはパスタを茹でます。茹でてる間にソースを作ります。ソースって言っても本当に簡単で、生のニンニクがあればいいんですけど、なければこういうニンニクチップスみたいなものでも全然大丈夫です。ニンニクはちょっと細かく切ってください。お家に鷹の爪とかがあって、辛いのが苦手じゃなければ、そちらを入れてもらっても全然大丈夫です。細かく切ったら、今日はオリーブオイルをメインに使うので、結構多めに入れてください。しっかり熱したら、じゃあ入れていきます。ニンニクはすぐに温まっちゃうので、サバの水煮缶です。旨味が入っているEPA、DHAはこの汁に入っているので、汁ごと入れちゃいます。お好みですけど潰しながら、こういう感じで。これだけでも旨味が凝縮されていて美味しいんですけど、もうちょっと味を見ましょう。美味しい。お好みですけど、塩をちょっと足すのとコショウですね。粗挽きのコショウの方がいいと思います。振ってあげてください。
ルッコラにはアリルイソチオシアネートという成分が入っているんですが、それが胃腸を整えてくれる動きを整えてくれる、胃炎とかの予防とかにもいいと言われているんですね。胃腸が弱い方にもおすすめになります。
茹で上がったパスタを、ザルにあげないで、この茹で汁のまま入れちゃった方が美味しいので、このオイルがあるところに、ちょっとパスタの茹で汁も入れながら入れていっちゃいます。これで入れて、このままザクッと混ぜちゃってください。ここでも一回味を見た方がいいです。美味しい。天才かも。
じゃあこれ盛り付けていくんですが、今日は色味がこれだけなので、ちょっと黄色いかわいいお皿、これいったらっていうところなんですが、器が素敵だったら美味しそうに見えるでしょ。味が微妙でパスタの盛り付けが失敗なんだけど。よいしょ。こうよね。まあまあしょうがないね。でもそうやって盛り付けていても、あんまり意味ないんです。なぜならば、このルッコラを食べやすいように水で洗って水を切ったルッコラを、はいどどーん。もうねこれね、いっぱいの方が美味しいの。こんな感じでかけた後に、ちょっとだけまたオリーブオイルを、よいしょ。はい、かけて完成しました。
はい、ルッコラたっぷりの美肌パスタになります。パスタが見えないくらいルッコラをどんと入れることがポイントです。だってルッコラを食べるためにパスタを茹でたみたいな感じなんですね。パスタって確かにそれだけだと血糖値がすごいどんと上がりやすいんですが、食物繊維が入っているお野菜と一緒に食べることで急激な血糖値の上昇を抑えることができます。サバに入っているEPA、DHAプラス、先ほど言ったルッコラの美肌成分と一緒に食べることで、炭水化物だけなんだけれども、ちゃんとタンパク質もそしてミネラルも、あとはビタミンも取れるっていう一皿なんだけれども、これで多分メインディッシュもそしてビタミン類も全部取れるので、ランチには最適なものになります。
女性の美肌はもちろんですけれども、動脈硬化が気になる、あとメタボがちょっと気になるお父さんのランチとかにも、これだとちょっとオシャレだし、あとお子さんもね、これだったらサバが嫌いとかお野菜嫌いって言っても、パスタと一緒に混ぜながら食べると意外と食べてくれるので、ぜひぜひ作ってみてください。

Hello everyone. I'm Arata Tomori, an internal medicine and dermatologist. Today we're starting another episode of "Arata's Kitchen." A couple of episodes ago, I introduced several kale recipes—soup and salad—and I got many comments saying kale is hard to find. So people asked if there were other vegetables besides kale that provide similar nutrients. Today I want to introduce a vegetable that's packed with nutrients like kale, but is also simple and delicious as a substitute. Plus, since everyone loves easy dishes, pasta is probably a favorite, so today I'll be making a beauty-boosting pasta using this kale-alternative vegetable combined with simple pasta. Let's get right into the ingredients. That's all we need. As always, my recipes are simple with few ingredients, but they're packed with nutrition, so please keep that in mind.
Today's main ingredient is arugula (rucola). Arugula is actually in the same brassica family as the kale I talked about last time. Being a brassica vegetable, it has detox properties, strong antioxidant effects, and contains plenty of the so-called ACE vitamins that promote beautiful skin. Vitamin A converts into beta-carotene once inside the body, and it's said to contain 3600mg per 100g—an extremely high amount. Vitamin A is involved in repairing skin mucous membranes and adding moisture, which helps boost the skin's barrier function.
Plus, it contains vitamin C—twice as much as lemon! I always talk about incorporating vitamin C and vitamin A into beauty supplements, but eating them is equally important. So today's pasta features arugula, packed with vitamin C and A, as the star ingredient. Normally arugula is just a garnish, but today it's the main event.
It's also rich in minerals like calcium and potassium. Additionally, it contains a large amount of folic acid, which is important during fertility treatment. Basically, this single vegetable provides both vitamins and minerals. And then there's the fiber—when you get enough dietary fiber, it promotes peristaltic movement in the intestines, which improves gut health. This in turn increases skin moisture levels, giving you that clear, glowing complexion. So with vitamins and minerals boosting the skin's barrier function, plus that added clarity, this really is an all-around amazing vegetable. That's why I'm using it as the main ingredient today.
The second ingredient is canned mackerel in water. Honestly, this canned mackerel provides today's protein, plus the EPA and DHA I mentioned last time—it basically handles all the seasoning too. As I mentioned before, canned fish is prepared and sealed almost immediately, so the omega-3 fats like EPA and DHA, which have strong antioxidant properties, remain unoxidized. Even people who think they're properly getting EPA and DHA through supplements often find that the supplement version has already oxidized, according to some research data. Ideally, you'd want to get EPA and DHA from fresh fish, but when cooking fish yourself feels like too much trouble, canned fish is the ultimate solution. So today, I'll be using this canned mackerel packed with concentrated EPA and DHA, along with the beauty-boosting arugula I mentioned as a kale alternative—these two ingredients will be the stars of today's pasta.
First, bring a large pot of water to a boil. This is one key point: when boiling the pasta, add more salt than you normally would. Today I used Italian rock salt, which is a coarse salt like this. Adding plenty of this is the key point. This way, the pasta absorbs the saltiness thoroughly, so even if the sauce tastes a bit bland, it'll still work out fine. So make sure to add a generous amount of salt.
As for the pasta, I'm using this one—organic wheat linguine. The key point is that it's linguine, a slightly flat noodle. I chose flat pasta because I thought it would absorb the saltiness better. There are many types of pasta, but I use ones made with organic wheat. However, any type should work fine. Since this is for two servings, this is about the right amount. The package says to boil for 7 minutes, but I want it a bit al dente, so I'll take it out around 6 minutes.
So first, let's boil the pasta. While it's boiling, I'll make the sauce. Though I call it a sauce, it's really simple—fresh garlic is ideal, but if you don't have any, garlic chips work just fine too. Chop the garlic finely. If you have chili peppers at home and don't mind some spice, feel free to add those as well. Once it's chopped, since I'm mainly using olive oil today, add a generous amount. Once it's properly heated, let's add the ingredients. Garlic heats up quickly, so next comes the canned mackerel. The umami flavor is in the liquid, so I'll add it along with the broth. Mash it up as you like, like this. Even just this is packed with concentrated umami and tastes delicious, but let's check the taste a bit more. Delicious! Depending on your preference, add a little more salt and pepper—coarsely ground pepper works best. Go ahead and sprinkle it in.
Arugula contains a compound called allyl isothiocyanate, which is said to help regulate digestive function and may even help prevent conditions like gastritis. It's great for people with sensitive stomachs too.
Once the pasta is done boiling, rather than draining it in a colander, it's better to add it directly with some of the pasta water still on it. Add some pasta cooking water to the pan with the oil, then add the pasta itself. Mix it all together like this. It's good to taste-test again at this point. Delicious! I might be a genius.
Now let's plate it. Since today's dish only has limited colors, I thought a cute yellow plate would work well—if the plate looks nice, the dish looks more appetizing, right? Even if the flavor is a bit understated and the pasta plating isn't perfect... there we go... yeah, that's fine, can't be helped. But plating it nicely alone doesn't mean much, because now I'm going to add the arugula, washed and drained for easy eating—here it comes, ta-da! The more, the better with this. After adding it like this, I'll drizzle just a bit more olive oil on top—there we go—and it's complete!
And there you have it: a beauty-boosting pasta loaded with arugula. The key point is piling on so much arugula that you can barely see the pasta underneath. It's basically like boiling pasta just so you can eat the arugula. Pasta alone can definitely spike blood sugar levels quickly, but eating it together with fiber-rich vegetables helps suppress that rapid rise in blood sugar. By combining the EPA and DHA from the mackerel with the beauty-boosting nutrients from the arugula, even though it looks like just carbs, you're actually getting protein, minerals, and vitamins all in one dish. This single plate essentially works as a main course while covering all your vitamin needs, making it perfect for lunch.
Of course it's great for women's skin health, but it's also a stylish lunch option for fathers who are concerned about arteriosclerosis or metabolic syndrome. And even for kids who say they dislike mackerel or vegetables, mixing everything together with the pasta often makes them surprisingly willing to eat it. So please give this a try!
