Transcript (English)
Hello everyone, I'm Arata Tomori, an internal medicine and dermatologist doctor.
Today we're starting the second installment of Tomori's Kitchen. Thank you for joining me.
Last time I introduced the beauty-skin soup I make at home, which used kale. This time, I'm persistently using kale again.
I'd like to introduce a kale salad, a beauty-skin salad, so please watch until the end.
Do you remember when, way back at the beginning, I did a YouTube live stream where I ate a huge amount of kale salad?
That one was actually ordered through Uber Eats, but at home I often make kale into a salad myself and eat it.
People tend to think of kale as something you buy pre-made to eat, and I'm often asked how to eat it at home,
so it's super easy. It's almost embarrassing to make a video about something this simple, but that also means you can eat it easily.
Easily eating plenty of kale — as I've mentioned before, kale really helps suppress chronic inflammation in the body,
and it also increases the skin's moisture content and improves the quality of sleep.
So, since I want everyone to eat lots of it for beauty and health, I want to make this dish really simple, so let's get started.
Let's begin right away. It really finishes in the blink of an eye, so if you look away you might miss it.
The kale I'm using today is called curly kale, and it's a bit soft.
Today's kale is on the thicker side, but it's the kind that's soft enough to eat in a salad.
However, that doesn't mean it has less vitamins, minerals, calcium, dietary fiber, or beta-carotene, so don't worry about that.
Next is the apple. I'll use an apple. Apples contain something called pectin, which becomes food for gut bacteria.
That helps relieve constipation. When constipation is relieved, we don't know exactly why, but it's known that the skin's moisture content increases.
So you might notice that when you're constipated, your skin looks dull, you get breakouts, or it gets dry,
and it's known that improving your gut environment improves these things too. We just don't know why.
So in that sense, apples are a beauty-skin food, which is why I'm using apples.
Next is walnuts. For example, they're said to help with weight loss, and may be good for fertility, since walnuts contain omega-3s.
Various studies suggest they may help prevent things like heart attacks and strokes,
and it's generally recommended to eat about 7 walnuts a day.
But not many people casually snack on walnuts, so today I'll use them both as a flavor accent and to boost the nutritional value.
That's actually all the ingredients. First, let's roughly prepare the kale — I won't use a knife on it at all.
Just tear it apart with your hands and rinse it.
When I made the beauty-skin soup, I used the stem too, but when adding it to a salad, the stem is a bit bitter and doesn't have a great texture, so I won't use it this time.
So keep the stems aside and use them in soups or stir-fries instead.
There are really many varieties of kale these days — at the supermarket you can find large kale, as well as softer kale that's almost like spinach.
But I often use this curly kale because it looks nice in salads.
People tell me I look like a caterpillar because I eat so much kale, but it's known that eating about a bowlful of salad a day is good for beauty and health, so please make sure to eat it.
Once you've torn it up like this and washed it normally, it tastes better if you drain the water well.
This salad spinner might seem unnecessary at first glance, but whether you have one or not makes a huge difference in how the salad turns out.
Cut it up like this and set it aside for now. Next is the apple.
Today I'm using about a quarter of an apple, but if you have kids, using more apple might make it sweeter and easier to eat, so feel free to use a bit more.
Having the apple skin on adds a nice red-and-green accent, but I tend to peel it off anyway.
If you think it looks pretty with the skin on, that's totally fine too.
If it's an organic apple, you can leave the skin on, but even if it's not, as long as you wash the skin thoroughly, that's fine. Just cut it into bite-sized pieces.
Since this is really simple, let's put the washed kale into a bowl.
Add the apple in here.
Next are the walnuts.
The walnuts I bought today are a bit large, so break them up roughly with your hands.
If they're small, you can just add them as they are.
Walnuts are also known to help with weight loss, so don't you see them sold at convenience stores these days?
Some people eat walnuts or roasted almonds as a low-carb snack, so I really think walnuts are a superfood.
Once you've added them roughly like this, add the olive oil.
I really love this olive oil, so just drizzle it around roughly, about one go-round.
Today I'm using apple cider vinegar.
You could use white vinegar instead, but apple cider vinegar tastes better in this case,
so add about half the amount of the olive oil.
This part is also up to personal preference, but since I have kids, I add honey to bring in some sweetness.
I think I mentioned honey in another video — it has such strong antibacterial properties that it can substitute for medication, so I make sure to add plenty of honey.
Honey also helps balance the gut environment.
Even though this kale salad is described as being good for the skin, maybe half of its beauty benefits actually come from the gut environment.
Mix this together, and once it's well combined, add a little salt and pepper, and mix again.
Since it's quite green, some people might think it will be bitter, but adding honey and apple brings out a nice sweetness.
Okay, it's done! Let's plate it.
Alright, it's finished.
Here it is — the apple, walnut, and kale beauty-skin salad.
Wasn't that easy? All you do is cut and mix — no skill required at all, and it's simple to make.
So as long as you have the ingredients, it really only takes 5 to 10 minutes.
When you try it, it might not look like much, but it has a subtle sweetness and tartness that makes it really delicious.
If you're not a fan of sweetness, you can skip the vinegar and honey, and just use olive oil, salt, pepper, and Parmesan cheese instead — that works great too.
But since I want my kids to eat this, I add apple and honey to bring in a bit of sweetness.
It's like Vermont curry, right? If you add apple and honey, it generally becomes delicious — that's the same kind of pattern here.
To sum up, kale is really good for the body.
For example, it's known to improve sleep quality, enhance calcium absorption, and increase the skin's moisture content.
It also has very strong antioxidant properties, which help suppress chronic inflammation in the body. As I always say, to be healthy, you need to suppress chronic inflammation.
By eating a bowl or plateful of this every day, I think you can help suppress chronic inflammation in your body.
Apples also help balance the gut environment, and honey has such strong antibacterial properties that it's sometimes called a natural antibiotic,
and since it's going to get warmer from here on, though this isn't exactly about cold prevention,
for the sake of beautiful skin and good health, I hope you'll all eat this simple kale, walnut, and apple salad and live vibrant, energetic days.
