However, there are "normal" people who don't gain weight but aren't overly thin either, even though they don't do anything special. In other words, by adopting these habits, you become less prone to gaining weight, and even people who are overweight can find it easier to lose weight by incorporating these habits. Please watch until the end. **Habit #1: Make Dashi (Japanese Broth)** You might think, "Dashi?" but do you make dashi when preparing miso soup or other dishes? Making dashi might seem like a hassle, and store-bought powdered dashi is perfectly fine too. It's becoming clear that properly making dashi is beneficial for both dieting and health. The umami compounds found in dashi have been shown to have stress-reducing effects. When you sigh with relief after drinking miso soup, it's not just because it tastes good—it's also due to these umami compounds. Umami components are amino acids—for example, glutamic acid from kelp, inosinic acid from bonito, and guanylic acid from shiitake mushrooms. These combine in complex ways to create umami flavor. Glutamic acid, abundant in kelp, is known to activate stomach movement and send signals that make you feel full, which helps stabilize appetite. Additionally, histidine, a component found in dried bonito, stimulates the satiety center in the brain, allowing you to feel full even after eating smaller amounts. In other words, by properly making dashi and consuming umami compounds daily—even with the same dishes—you can prevent overeating. If making dashi every day feels like too much trouble, store-bought versions are fine too. Recently, there are even supplements like "umami dashi" powder soups that taste like real dashi when you just add hot water. People living alone might want to carry these around and drink them when they need a quick break. Please try incorporating umami and dashi into your daily life. **Habit #2: Freeze Mushrooms** Many people on diets eat mushrooms because they're low in calories, high in fiber, help regulate gut health, relieve constipation, and add bulk to meals to prevent overeating. But how do you store your mushrooms? Actually, storing them normally is a waste of their potential. Mushrooms contain compounds like mushroom chitosan, which helps break down fat, and MX-Fraction (found abundantly in maitake mushrooms), which suppresses blood sugar spikes and promotes cholesterol excretion. These compounds are released in greater amounts when mushrooms are frozen rather than stored fresh. This is because these compounds are released when the mushroom's cells break down. If you use frozen mushrooms directly in miso soup while cooking, you'll benefit from significantly more of these compounds than if you ate fresh mushrooms. For instance, mushroom chitosan increases by up to 12 times when mushrooms are frozen compared to eating them fresh. If you want to use mushrooms for dieting, freeze them and then use them in your cooking. It's best to use frozen mushrooms within two weeks to a month. Since mushrooms spoil quickly, freeze them as soon as you buy them so you can use them easily in your daily cooking. **Habit #3: Use Shikuwasa Instead of Lemon** You might think, "She's from Okinawa, so of course she's promoting shikuwasa," but shikuwasa actually has some amazing hidden benefits. The scent of lemon suppresses appetite, and people squeeze lemon over fatty foods because it contains acids that help digest fat—and shikuwasa contains these same properties. But that's not all—shikuwasa is also rich in a compound called nobiletin. While nobiletin is found in many citrus fruits, when you compare 100g of regular mandarin oranges to 100g of Okinawan shikuwasa, shikuwasa contains a whopping 10 times more nobiletin. According to research published in the Ryukyu Shimpo newspaper, when participants drank either a beverage containing 100% concentrated shikuwasa juice or a placebo beverage (190ml total, morning and evening) for 12 weeks, the shikuwasa group showed a greater reduction in cholesterol levels. This scientifically demonstrates that nobiletin promotes cholesterol excretion and suppression. While lemon is great too, you can enjoy Okinawan shikuwasa in many ways—squeeze it into sparkling water like lemon water, add it to dishes, mix it into drinks, or serve it alongside grilled fish. Please remember that shikuwasa contains nobiletin! **Habit #4: Sleep in a Completely Dark Room** After talking about food, you might be surprised by this sudden shift to talking about bedrooms. However, it's now known that sleep quality is also crucial for dieting. People who don't sleep well tend to become obese more easily. There's an interesting study published in an American medical journal. Researchers gathered healthy women with no pre-existing conditions, no heart or blood pressure issues, who weren't pregnant, and who didn't have irregular schedules from shift work. They tracked these women for five years, comparing those who slept in dark rooms versus those who didn't. The results showed that women who slept with lights on had a 17% higher risk of gaining more than 5kg over the five-year period. Gaining more than 5kg is quite significant, isn't it? It's surprising that simply turning a light on or off could make such a difference. This is related to how light interferes with deep sleep—even with closed eyes, you can sense light, which stimulates the brain and prevents deep, restful sleep. The accumulation of poor sleep quality day after day becomes an obstacle to weight management. If you're afraid of the dark and can't sleep without some light, or if you tend to leave a bedside lamp on while sleeping, please remember that this habit could result in gaining more than 5kg over five years, and try to sleep in a completely dark room instead. **Habit #5: Don't Heat Up Convenience Store Onigiri (Rice Balls)** Do you heat up onigiri when you buy them at a convenience store? I personally prefer cold rice, so I never heat mine up. Of course, freshly cooked rice is delicious too, but the carbohydrates in rice actually transform into a substance called resistant starch when the rice cools. Resistant starch not only helps prevent blood sugar spikes but also, like dietary fiber, produces short-chain fatty acids that promote intestinal peristalsis. These short-chain fatty acids serve as food for gut bacteria and help stimulate bowel movement. If you're eating rice, there's no need to deliberately cool freshly cooked rice, but for wheat-based onigiri (which are naturally cold anyway), eating them without heating results in less blood sugar spike and better benefits for gut health compared to microwaving them. It's said that Japanese people in the past were rarely overweight, and some experts suggest this might be because rice cookers back then didn't have a keep-warm function, so people often ate onigiri made in the morning cold by lunch or dinner—meaning they consumed more resistant starch. This mechanism of producing resistant starch and short-chain fatty acids is now being reevaluated for its health benefits. While warm rice is delicious too, if your rice happens to be cold, think of it as "having transformed into rice that's less likely to make you gain weight" and enjoy it! **Summary** 1. Make dashi: It contains various beneficial compounds that are effective for dieting. 2. Freeze mushrooms: Frozen mushrooms have powerful weight-loss benefits. 3.
